completeOnboarding

Record a finished onboarding in the caller's OWN profile (T-FU-PROFILE-ONBOARDING-WIRING): the risk answer becomes their risk posture (LOW conservative, MEDIUM balanced, HIGH aggressive) and the experience answer becomes their experience (NEW beginner, SOME intermediate, EXPERIENCED advanced), each only when none is chosen yet. A value already chosen in Profile settings is never overwritten, so a replay changes nothing. Returns the profile.
